Overnight Buckwheat

I mentioned in this post that I recently found out I’m sensitive to oats and almonds. Since then I’ve been experimenting with various substitutes for my beloved overnight oats, and finally found my favorite: buckwheat.

Try it out in this recipe!

Serves: 1

Ingredients:

1/4 cup organic buckwheat groats

1/2 cup organic unsweetened coconut milk

1/2 tsp organic vanilla extract

2 tbsp organic pecan butter

3-4 frozen strawberries

Mix first three ingredients together overnight. In the morning, add pecan butter and strawberries, then blend together.

*Tip: this is great for adding your favorite protein powder to — just add a little more milk for desired consistency!
