Pumpkin Spice Protein Overnight Oats


This is my latest obsession, perfect for a quick, on-the-go breakfast and a great way to sneak in extra supplements! (Pro tip: add pumpkin seed protein powder for a boost)

Serves: 1

1/2 cup quick oats
3/4 cup unsweetened vanilla almond milk
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1 tsp organic vanilla extract
1/2 organic banana
1 organic strawberry
1 tbsp organic almond butter
Your favorite protein powder

Mix quick oats, 1/2 cup almond milk, cinnamon, pumpkin pie spice, and vanilla together in a mason jar. Refrigerate overnight. In the morning, pour mix in a blender, add 1/4 cup almond milk, banana, strawberry, almond butter, and protein powder. Blend well, pour back into mason jar, grab a straw, and either enjoy immediately or take on the run for later!
